Asian Stir Fry

Hi there :)

We had a great weekend at our caravan. It was lovely weather and as long as my son enjoys himself i have some R&R too :) We had a birthday party and went out to dinner. I had a few wines too....I didn't count but am thinking i used up my extra's :)

I am also working on my garden for the comping year. I have a patch of 7x7 feet. So yes, its a Square-foot garden hahahaha. I plan on planting leek, spring onions, tomatoes, broccoli, onions, spinach and green beans. Oh and i really want to try garlic....any suggestions ?

I wanted to use up some left over vegetables for dinner tonight. Most of the vegetables are home grown :) So i made this recipe and it turned out delicious :)

Asian stir fry:

Vegetables i had leftover, you could use almost anything :)
1 leek (home grown)
1/2 red pepper
1/2 yellow pepper
1 onion (home grown)
1 handful of bean sprouts
1 handful of green beans (home grown)
1/2 chili pepper (home grown)
Clean them as necessary and shred them all together in the kitchen machine :)

Marinade for the chicken:
2 spoons of olive oil
2 spoons of soy sauce
1 teaspoon of ginger powder
1 teaspoon of coriander powder
1/2 teaspoon of cumin powder
3 garlic cloves
Mix them all together and chop the chicken (i used 400 grams) into small bits. Stir the chicken into the marinade and let it stand for a few hours.

Boil rice (for three persons) as directed on the pack. Let the rice 'dry' with the lid on. Stir fry the chicken in a hot pan or wok. Add your vegetables and stir fry that too. Add the rice and mix it all through ! Done.

This worked out at 8 weight watchers points. If you wanted to double the rice it would be 12 points.
