Asian Stir Fry

Hi there :)

We had a great weekend at our caravan. It was lovely weather and as long as my son enjoys himself i have some R&R too :) We had a birthday party and went out to dinner. I had a few wines too....I didn't count but am thinking i used up my extra's :)

I am also working on my garden for the comping year. I have a patch of 7x7 feet. So yes, its a Square-foot garden hahahaha. I plan on planting leek, spring onions, tomatoes, broccoli, onions, spinach and green beans. Oh and i really want to try garlic....any suggestions ?

I wanted to use up some left over vegetables for dinner tonight. Most of the vegetables are home grown :) So i made this recipe and it turned out delicious :)

Asian stir fry:

Vegetables i had leftover, you could use almost anything :)
1 leek (home grown)
1/2 red pepper
1/2 yellow pepper
1 onion (home grown)
1 handful of bean sprouts
1 handful of green beans (home grown)
1/2 chili pepper (home grown)
Clean them as necessary and shred them all together in the kitchen machine :)

Marinade for the chicken:
2 spoons of olive oil
2 spoons of soy sauce
1 teaspoon of ginger powder
1 teaspoon of coriander powder
1/2 teaspoon of cumin powder
3 garlic cloves
Mix them all together and chop the chicken (i used 400 grams) into small bits. Stir the chicken into the marinade and let it stand for a few hours.

Boil rice (for three persons) as directed on the pack. Let the rice 'dry' with the lid on. Stir fry the chicken in a hot pan or wok. Add your vegetables and stir fry that too. Add the rice and mix it all through ! Done.

This worked out at 8 weight watchers points. If you wanted to double the rice it would be 12 points.
This recipe is on our repeatable list !

How fresh does your garden grow ?

Hi there,

Everytime i am in my garden...i get this nursery rhyme in my head...mary, mary quite contrairy... ROFL.


 Green beans still on the stalk and harvested :)
 Tomatoes not yet ripe :)
 Curly lettuce :) Ready for picking 
 Beetroot harvested ;)
 Boiled, chopped and jarred :)
 and pickled hihi
and mint for in my tea :)

Today we ate stir fried chicken with green beans and cucumber. Yup all stir fried, something i picked up from the Chinese company i used to work for. Here is a photo of dinner.



I had a weigh in yesterday too and was not happy with what i saw. I gained 4 kg during the holiday :( I really need to keep this on track for a while. I did a little shopping today and because i had 14 points left i bought Danio Special. It was a full yogurt with banana, kiwi and mango. It was good ! Used up my points in a healthy way...got to score off a dairy product too :)

Welcome :)

Welcome to my blog !

Here I want to share my life with the world wide web. I want to stimulate myself into losing some weight. I want to share my hobbies, laughs and sorrows with you !

So let me introduce myself. My name is Jacquie. I am 40. I want to get healthy (read loose lots of weight) preferably before i hit menopause. I have the most wonderful son in the world. He is 8 and has ADHD and PDD-NOS and that is a lot of work. I have been married for 15 years and love my hubby dearly. I work 26 hours a week (spread out over 5 days). I have a score of hobbies...all of which will probably pass review sometime or another.

I joined weight watchers in January 2012. I lost 25 kilo's (4 stone or 55 pounds) in a year and gained back half of that over Christmas and New Year. Since then i have been finding it hard to motivate myself into getting back on track.

I love planning our weekly menu's, i love cooking (making and changing recipes), i love to harvest clean and healthy food from my little square foot garden.


I want to blog on a regular basis. I need to do this !
